Take a Culinary Journey

Travel across the Americas through bold and comforting flavours. Start with a rich Dungeness crab bisque or West Coast shellfish in heirloom tomato broth, then explore Mayan-inspired cochinita pibil on blue corn tostada. For mains, Canadian rangeland bison striploin with spruce tip reduction, Yarrow Meadows duck confit with Saskatoon berries, or sumac-spiced wild salmon with succotash showcase the diversity of North and Central American cuisines.

This menu is a delicious journey rooted in heritage, tradition, and regional bounty.
