This menu focuses on our environment by featuring sustainable, local and organic products. It also highlights some heritage grains, heirloom beans, Ocean Wise seafood and proteins that have lower greenhouse gas emissions.
Farro Verde is field parched green emmer or Farro Antica. The heritage grain is harvested in a small window—while green before it ripens—and must be dried and parched (fire threshed). It has a unique smokey flavour.
Cannellini beans are an heirloom variety that are native to Tuscany, and these beans are grown and harvested in Canada.
Prairie Ranchers is a collective of ranchers in Alberta that focus on grass-fed beef and pork that is pasture raised in smaller herds.

Reservations
Reservations are limited. Please contact us with your preferred date, time and number of guests. Reservations are available for 5 pm, 5:30 pm, 6 pm and 6:30 pm while seats are available.
